Susie Homemaker


I'm feeling so Susie Homemaker this week, and I love that feeling, okay maybe not on housecleaning days, but today was not that day. I've been sewing and canning this week.

Today I canned salsa. I found the recipe here. I reduced the sugar to 1/3 cup and added a little fresh basil in the last 10 minutes other than that I pretty much followed as described.

Salsa canning is much more labor intensive than making fresh salsa, but there is something so rewarding about seeing those jars all stacked up. Even though it took me all day I have this feeling of accomplishment. You know that apron worthy feeling that just might make your grandma proud.

  1. Hi Mindy! I see that you tried the Best Salsa recipe, too. It's my all time favorite! I came by your blog and did a little browsing so I'm asking... how do you freeze or can your corn? When you buy canned corn it's always whole kernel... have you found a way to do this?? Just curious because I have never been able to do a decent job on corn! Thanks for any advice you send my way!! penny.rae@hotmail.com

    I shuck and silk the corn, then cut it off the cob, add a little salt, cook it until it is hot all the way through, let it cool, bag it up, and pop it in the freezer. I wouldn't call it whole kernel, more like creamed corn, but with a way better flavor!

  6. Penny, you are right! It seems as though I'm living life in fast forward. I'm trying hard to hold on to each day and savor it!
